Recently, I decided I want to learn about cheese. I love cheese, but I get stuck in a rut. I love cheddar, English the most, a strong bleu, I could eat feta by the truck loads, and of course smear brie on crackers all day. But, I know there's a world of imported molds out there just waiting for me to slice, smear, spread, crumble, and shave onto anything and everything.
Cheese of the week: Herbed fromage d'affinois
Creamy, buttery, fatty, and delcious!
I jokingly decided that this cheese will now replace any butter I would have spread on bread.
Seriously though. It's delicious. It's mild and salty. It's perfect for snacking! If you love brie you will love this. It has a higher protein and fat content than brie so it's creamer and better for you!
My Lunch
I drizzled sliced bread with olive oil and toasted in the oven.
Sprinkled a little sea salt and rubbed a piece of cut garlic on one side.
Spread as much cheese as you want on each slice and then I put cucumber and tomato on mine.
The French would probably use radish or something else, but this is what I had on hand!
You should try it. Even my little taste tester licked all the cheese from his bread and asked for more :)
